早朝から筍を採ってきました。田舎なので筍は昔から近くにあり、特に興味はありませんでしたが取りに行ったりすると嫁さんが喜ぶのでたまに採りにいきます。
採りに行く時間は得に決めていませんが、今回はよくいく料理屋の主人が市場で筍を仕入れる時は朝３時に採ってきたやつを選び、皮ごとラップで包み蒸す。というのを聞きましたのでどれほど違いが出るのかと今回は聞いたとおり朝３時に起きて次男を連れて懐中電灯を持って採りに行きました。
嫁さんが昼ごろには頭をハツリそのままラップで包み蒸し器で蒸してくれました。
いざ取り出してみると蒸した方が皮を剥くのがむきやすく、味も皮のうまみが染み込んで湯掻くよりもおいしいような気がしないでもないかと感じました。しかしもともと毎回湯掻いていて蒸した事がないので蒸したから味が違っておいしいのか、朝採りだからおいしいのか、苦労したからおいしい感じがするのかわかりません。。
